the past 11 years I think our wine was made my family has 136 year old tradition appointment so it is pretty clear that winemaking in my family has been the biggest tradition which has influenced me and inspired my interest in winemaking so I'm sure that most of you know the basic steps of point making but maybe few of you will know why money making is an art or science to make their understanding I want to talk about the good science of winemaking to make wine from the grape juice it requires the chemical process called fermentation fermentation is process in which substance is broken down into simpler substances so it can change cut flavor and color of the wine but we have two different kinds fermentations we have a hot fermentation and Cult fermentation hot fermentation can go up to 37 degrees Celsius where is metabolized and produce alcohol this kind of fermentation is usually used for red wine to increase the color and tenon furthermore on white wine it in Korea it can lead to the condition of vintage but most of the winemakers try to use cold or cooler fermentation for red and white and rosé wines to keep the delicate aramis in wine which can be lost at a higher temperature well everything that I've said how we drives to the point that winemaking is the part of the science but how science gave us the perfect wine and is it possible the answer of this question is no I remember in my childhood my granddad used to say it all the time wine is like a baby you need give it all your time to raise it but in the end your hard work will pay off it's funny right I couldn't understand how one could be like the belly it's not physically possible but after all I'd get to the point that fine is the baby just like baby wine is sighing a lot of attention and unfortunately a lot of money too but most importantly my granddad taught me that wine making myths loss without love you cannot get perfect wine I remember even though my firm has been making wine for four generations I'm remembering to 2008 when George of a survival wore my salmon collective all the positive emotions - vineyards so Monday took the harvest and served made wine they did exactly the same steps as they did before but the wine didn't come out as expected it was small didn't have good taste and color we didn't even drink it but my this incident showed me that winemaking is not only the science but the masterpiece of art but the question is how ye can be like the masterpiece of art the art itself is the expression of human creative skills and imagination by producing products which brings primarily joy and different feelings and beauty to the audience so for me the winemaking is exactly the same so imagine if you take imagine that we have painters all of them have same brush and canvas but but the result is different but why because they have different feelings and emotions they don't have exactly same feelings even though if you take one painter there is no two identical painting so these are very networks so it drives it shows us that while making just like their art its feelings so if you put all your love to the vineyards and all your love to a process of going making you will get perfect of winemaking with perfect characteristics so I want to show you the picture like this painting you feel old all of you felt emotions right some fills happiness and some fills sadness so this gets us to the point that's just like the paintings we can't lie the biggest feelings after tuning the wine but in case of painting and in case of wine you got that feelings after several minutes or after several years maybe many of many people maybe all of you have drank the wine right but maybe feel you felt that emotion which was which was meant to ensure by the winemaker so I want to say that one brings not everything every emotion that was felt by the winemaker we see love with the passion with the beauty see everything in one glass of wine but how's that possible it's possible by the taste color and the smell so I guess everyone gets to the point but you know like beginners going when your wine makers beginning they try to search for the perfect formula but in reality that doesn't even exist in my family my father he was really really really trying to find something special some formula which will give give him the perfect wine but it was not possible so I guess everyone mentor and every person get to the point that was said in 428 BC by Plato nothing more excellent or valuable than wine was ever granted by the gods to men so I hope that from now on if you taste the wine you will get all the emotions which was felt by wine makers and you'll see their part and the science mixed together thank you very [Applause]
