ever thank you very much and I will leave well not really now because you have all I mean I have all your attention so just get to business because I that's what I do I eat right and I eat when I'm in Mumbai take a bite and then we'll talk because I'm here to talk something from this talking okay if we speak in India which was actually around the world have story has a texture to narrate it tells you the types of people living around in the city if you go to a posh area if you go to not so fancy get your kind of places you will find a similar kind of men and women strolling or loyalty around whatever word um and that's what it is what it tells you to hide a people live there the kinds of people live there the kind of food that they have to keep that all our of the city of that street every food has good and what I was coming to this disease I live in Delhi there's an old joke there is always under construction and uh for Mumbai as well these days because it was been coming here since about a half years and it's under construction but tell me one thing what are the visible changes that you see right in front of you while the city or to court is being transported and when it is done foreign people working yeah once it is all sorted then you have some blockable fancy restaurants ice cream cards sitting right outside so what changed people all these things changed now all these small cars are pushed away into one side so that it does not bother the beauty of the same building which perhaps may only build and that's what tells us the story or to cultural evolution of a city from a common man who needs a regular kind of food to somebody with little little less common who would eat not what about but like a slides but he could get into some kind of homemade Chutney in inside a handmade and hand picked thread not Bob so that's what changes are the physical changes but what is that do and what is that soul food is what I call because see food wins the nation it does not just tell you where is this particular Seafood is coming from but how it has come from right what is the one thing which is common between Harmony foreign um quick example would be we all know what curries in Delhi well it was completely now everywhere it's Global now uh in one of my interviews one of my discussions with the owner of one of the owner's father of Curry he started telling me about how they started right this guy who started this came up to Jama Masjid with a small car food cooked by his wife by the way just saying it was a family effort right wife will make the food tomato goes a very popular delicacy back in days there was some household now you have audio host uh and the very popular these two along with routine and that's about it this is he learned it from father who initially was in the mobile course now again he has in the right hand in both once they start putting up the state food it was solder mostly not so well of people because well of people will go all the way inside the boat and have until his food not so a lot of people will have sleep but think about this now where do we think about street food and curries no Seafood has changed and it's evolved to become a restaurant let's take a flip side which is key all of us drink tea started with this very elite English thing a way of drinking fees to drink in a person cup with ashes of milk maybe sugar maybe not we don't know depending on how bad a kid we want to be and suddenly when it was introduced to India it became a street food democratized to a different level it's got big of course not just cash okay but more milk and less water less tea or the other way down depending on your palette now you have these like lemongrassical masala full-on biryani right because and in each thing suddenly became a street food is changed let's talk about packing actually maybe not because we all know about value it's an artificial official food for students love birds without house and the Wonder lusters let's go to marketing and we will have the local food of the mountain what's the local food of the mountain Miami of course what else or maybe the beaches Mountain because I'll just close the mountain I mean yeah so that's how things change yeah every fish every place foreign should be complex because if it's simple then there's no fun because we remember stories like Romeo Juliet but we don't know about Sunita and lucky story so that's not the complex thing it should be as a while uh I learned a lot of different things from Street vendors many Big Time chefs or very popular fixes will credit that oh I learned this from that person right and that person most likely took another big fix like a popular known fish I on the other hand learned how to chop onion from Raju Bhai who used to make Pani Puri which is was the best when it comes to shopping and oil then they will respond to have a close to my house who was who was very great at making chicken Manchurian he would call it chicken manchuri so I believe it was chicken manchuri then Muhammad or as we call it Maulana he used to make really nice and he told me not to dip my hand is not what I think is more logical but yet he told me and I'm giving him that very that he first mentioned even though I remember one of those shoots I was doing I didn't dip my finger accidentally fit and then but yeah so don't tell your fingers that's what happened so what we're trying to say is all these fenders will teach you the best thing that they have learned bye because that's the only thing that they know because that's the best thing that they know they have asked specialty stores right if somebody is making sure today or what about that's the only thing that person is making for donkey years right because that's what he goes for that because she knows and hence the street food gives you that love there are certain advantages by the way of eating street foods it's easy to pick up because it's affordable because not just for students but for many many people it's available everywhere and we should also always remember that not everybody comes in Jaguar but there are people who comes so the street food is depending if you have food travel like me which is anyway um also the other benefit of seed food is that they are prepared fresh the difference between street food and fast food right they have prepared fish right in front of you which all their local spices local flavor and some sort of secret masala because they would say oh this happened 50 000 kinds of spices right we don't know it turns out to be only human and salt a lot of um foreign so that's how the student they are innovating right they are in the street food vendors are innovating by giving window in their life to understand the eating food gives you the opportunity to know them better too it's like a beginner video you know that why um Bombay Mumbai the same as street food is what about it reflects the way book Breakers are which is never stop over right you pick up the power you learn you come to Delhi with Hassan culture but there's also within the last atmosphere the streets put the most common state food is people and thereby you're also getting to know them and respect their culture in the modern times of course the taboo of eating other kind of food is going down that's what I would like to believe but not so much these two fight my food is better than yours and your food is better than mine yeah for example but like that what they decide for them and I tell them no there's no point of fighting because what they eat is best for them what you eat is best for you many many many balls can be able to eat food together if you sit down and you have interaction together right then evolution is there in the full space itself how is the evolution happening still food has stories you stand near the Thai and you start talking to people you will know almost everything happening in that Society all the news of that day restaurants don't have vegetables foreign it's fabulous things are happening if you go back in time work with peasants who are not so aware of people eating they were eating Java and Hawaii bread with little fish mostly some kind of beer and the cottage doesn't sound appetizing now let's think about the same thing in a you know fancy autism kind of restaurant you get an Autism level made out of Jawan live bread 699 rupees plus GST right that's all changed they are awaited same present food which once it was but not anymore it is now our food with our food that's how things evolved of course field food are also revolving and I wouldn't realize they are that's why you're seeing part of a lot more butter you're getting cheese and cheese and cheese right and you have random things put in your child like gulab jamun and also other things of ice cream like yourself but you really think these are also your street food you need to embrace them as much as you think debate Chef in Italy um he mentioned Chef Majesty he mentions that you need food is is so that's what I would like to invite all of you to please don't listen to other people's children create your own street food vendors because that's how you will be able to celebrate different culture different diversity and class and crafts to divide might just also go away so I'm going to go
